Layout and Design of Restaurant L’Entre-Côtes in Dives-sur-Mer

The design of the restaurant started with a blank space, with only the four exterior walls in place. We created a kitchen, storage area, and dishwashing area, as well as accessible restrooms and a staff changing room. The space also includes an indoor dining area and a terrace.

The client wanted to create a welcoming environment for both lunchtime workers and evening diners, particularly families. To optimize the available space, we opted for banquettes on each side, with independent tables and a large round table in the center, favored by families. Although the client initially desired the bar to be on the left side, we positioned it at the back instead. This arrangement maximizes natural light for lunchtime patrons. The bar, a central feature, is a significant element of the design. The open kitchen includes a pass-through window to connect with the bar area, facilitating smooth service flow for the staff.

When modifying or setting up a public establishment (ERP), it’s mandatory to submit a request for construction authorization to the town hall. This request includes an accessibility report, ensuring the restaurant is accessible to people with reduced mobility (PRM), as well as a safety report detailing safety elements (e.g., fire extinguishers) and evacuation instructions. Both reports are reviewed by specialized commissions. Once the plans were approved by the client, they were submitted to the town hall.

The restaurant, named “L’Entre-Côtes,” reflects its concept of being situated between two coasts. The chosen graphic elements blend barn-like features with a seaside atmosphere, despite these two themes being somewhat contradictory. Blue and yellow accents evoke the beautiful sandy and watery coast of Normandy, while concrete counters, wooden, and stone elements provide a rugged, barn-like feel. Comfortable chairs with geometric patterns add a modern touch.

The restaurant thus offers a warm, contemporary ambiance that appeals to a wide audience.
